March is National Nutrition Month, so let’s compete in a new kind of challenge, UAMS!

#justtryoneuams Challenge

The first challenge is for all of us to try a new vegetable or fruit each week and post a photo of it on our social media. Participants will need to tag one of our Get Healthy UAMS accounts on Facebook, Twitter or Instagram with the hashtag #justtryoneuams. Involve your friends and family and show us the new healthy choice you tried here on campus or elsewhere. Even cooking a vegetable in a new healthier way counts. Participants will be entered for a drawing for some UAMS swag!

Calling all chefs!

The Nutrition Department will have a plant-based entrée contest in March. Submit your favorite plant-based entrée recipe to to enter. The winner’s dish will be featured on the main line in the cafeteria on the last week of March and could find its way into our chef’s recipe staples! Submit your entry by March 15.

The Blue and You Fitness Challenge has begun!

UAMS Nutrition Month Events

  • March 4 — Starbucks refreshers will start being sold at The Gathering Place.
  • March 5— Mardi Gras will be celebrated in the cafeteria, and lettuce wraps will be offered at all retail locations as an alternative to bread.
  • March 7— The cafeteria will have a fruit bar available every Thursday in March starting on March 7!
  • March 11 — Falafel samples and recipes will be available in the cafeteria and The Gathering Place
  • March 13 — National Registered Dietitian Day — Thank a dietitian today!
  • March 14 — Join the Department of Dietetics & Nutrition in a seminar titled “Diet and Atherosclerosis: Do We Know What Counts?” presented by James Marsh, M.D.  at 4 p.m. in the Rahn Building, Room G/219.
  • March 15 — St. Patrick’s Day — There will be an Irish-themed menu in the cafeteria, and The Gathering Place will launch its “Green Smoothie.”
  • March 22 — National Water Day — Celebrate this with us and come try flavor-infused water in the cafeteria or the Gathering Place.
  • March 25 — A special zucchini boat will be available in the cafeteria on the main line. The cafeteria will start offering fresh, never-frozen 100 percent beef patties, which are lower in sodium, calories and  fat and have no preservatives or additives. Doc Java will debut its new menu!
  • March 27 — National Mediterranean Day and Whole Grain Day – There will be a whole-grain sampling event in the cafeteria from 11 a.m. to 1:00 p.m. Try their granola bars, morning glory muffins and whole-grain salad. Recipes will also be available. Come find your new favorite grain!
  • March 26 — National Creamed Spinach Day
  • March 30 — National Doctor’s Day — Thank a doctor today!
